Soul food for my darling husband who can’t help having seconds and sometimes thirds. I always make enough for 4 in the hope that we can enjoy leftovers for lunch the next day. To that point, you will need a ‘massive’ wok, or just scale back on some of the veg/meat. The time consuming part of this recipe is the chopping, but once you have all of the ingredients in a bowl, cooking couldn’t be much simpler!
Wow, this is by far the best dish that Jo has ever cooked for me. You can read into that either way, I think he did. It was the prefect comfort food for a couple who have been avoiding bread and pasta for January, but fancied a winter warmer. I have managed to stretch it to 2 suppers and 4 lunches, it was that good.
This delicious winter warmer was born of a glut of pumpkin over the Halloween period. I could tell that the boyfriend was sceptical after I mentioned a ‘healthy pumpkin soup’ was on the menu. There was even a hint of surprise as he complimented me on just how delicious it was. Try it!
